Just when you think cupcakes can’t get any better, you discover that you can make alcoholic cupcakes and the world of baking just becomes that little bit more exciting!
Bailey's white chocolate cupcakes
Basic cupcakes mix with white chocolate chips added to the batter before baking - the recipe can be found here.
- 175g icing sugar
- 75g butter
- 1-2 tbsp of baileys
Mix the icing sugar, butter and baileys together. A handheld whisk really helps if you have one. Placing a tea towel over the bowel helps the icing sugar from coating everything in the kitchen with a fine layer of sugar.
Once you are happy with the consistency of the icing, you can either pipe the icing onto the cakes once they've cooled down, or you can use a knife to ice the cakes which gives them a nice rustic feel.
