I didn’t think that you could beat the simplicity of scrambled eggs – then I saw that Jamie had put cheese in his and I was sold.
Cheese and Tomato Eggs
- 2 tomatoes or small handful of cherry tomatoes
- 2 eggs
- 8 basil leaves
- Cook the tomatoes in a pan over a high heat for 5 mins with a a bit of slat and pepper.
- Push to one side top with cheese.
- In the other half of the pan scramble the eggs, once almost set stir everything together and serve on toast topped with basil.
